Wake Up To Yellow

Last week I had the privilege of being invited to attend the “Wake Up To Yellow” campaign in Saskatoon, SK, hosted by the Egg Farmers of Canada*.  I have to say, when I was first invited to attend, I wasn’t really sure what to expect, but the event was great and so well done!  I was so impressed at the time and effort that had clearly gone into the set-up, design, and promotional material resources.

As a social media content creator, one of my favourite things to do is to learn more about local businesses; I think it’s great to be able to support people who are making a difference in my own city, province, and country, so the Egg Farmers’ Market was right up my ally! It was so much fun, wandering around the market, chatting with local Egg Farmers, and of course, let’s not forget all the amazing free swag!

I also love the opportunity to talk about things that matter to me as a mom, and healthy eating for my family is one of those things that we deal with daily at our house!  I’m not going to lie – eating healthy is sometimes a struggle.  As a working mom on the go, with kids in activities, and numerous other family commitments, it isn’t always easy to put together meals that are focused on good nutrition.  And don’t even get me started on the woes of dealing with picky toddlers who change their eating habits on the regular!

That’s why I’m so glad that my family has always loved eggs – not only are they easy to make, with so many possibilities for fun and unique recipes, they are also packed with nutritional value!  For example, did you know that each egg contains 6 grams of protein, as well as iron and is a great source of vitamin A?  Additionally, when you eat Canadian eggs, you can be sure that they are always free of added steroids and hormones.  Eggs are an absolute staple in our home – whether for breakfast to help us get our day started as a family, or for a quick supper when we’re in a pinch for time! I also love that I know my kids are getting so much of what they need nutrition-wise when they eat eggs.  Keep reading for a few of our favourite ways to eat eggs, along with links to some amazing egg-based recipes.

Breakfast Sandwiches:  nothing gets you going in the morning like a hearty breakfast sandwich made with eggs!  We love to make our breakfast sandwiches with either bagels, or English muffins.  In addition to a fried egg, there are so many options for toppings!  Our staple toppings are bacon and chedder cheese, although we occasionally get fancy and include sliced avocado, tomato, or cream cheese.  The possibilities are endless, and so easy! Egg-Salad:  one of our all-time favourite lunch options is classic egg-salad.  I keep it pretty simple with boiled eggs, mayo, a dash of dijon mustard, salt, pepper, and dill.  However, egg-salad is another one of those options that has so many possibilities!  Check out the following links for a couple of unique twists on classic egg-salad:


Omelettes:  when our family is in need of a quick and easy supper that we know is still packed with nutrition and will leave us feeling full and satisfied, omelettes are an absolute go-to!  The best thing about omelettes is that you can literally add anything you’d like!  Some of our staple ingredients (in addition to eggs of course), include: chedder cheese, tomato, mushrooms, ham, and peppers.  However, other awesome additions include avocado, dill, basil, a range of cheeses, bacon, spinach, and onions.  Check out the following links for a few absolutely amazing looking omelette options:

  1. We eat so many eggs in our house; around 2 dozen between the two of us each week. I love using them for a meal-prep frittata or hard boiled eggs for breakfast in the morning.

  2. Eggs definitely provide so much nutritional value! I definitely make sure that they are always in the house as an option.

  3. One egg dish that I like to make are little lunchmeat cup with eggs in the middle that you cook in the oven. They are perfect for a little snack or lunch.

  4. Wow! I loved eggs who doesn’t? It’s a good appetizer and I believe it is organic which makes it very healthy.

  5. Nice post! I love learning about local food businesses, too! And, hello? Eggs are absolutely wonderful! Nice photos!
